Today we cook some delicious muffins with carrots. Is a special recipe, but definitely delicious! First cut the butter into pieces then grate carrots. In a bowl we mix flour, sliced almonds, baking powder, baking soda, salt, cinnamon, ground ginger and ground allspice. In another bowl, separately, we put the grated carrots, coconut, pineapple bits, oil, sugar, eggs and vanilla essence. Use the mixer to mix them. We put together the mixtures of two bowls and mix them. Thus obtained mixture, pour it into muffin forms. Put it in the oven for a few minutes. Meanwhile, take a bowl in which we mix some confectioner sugar, cream cheese, butter, lemon juice and almond extract. Now we just have to decorate cupcakes and everything is ready! Have fun!
